CHOCOLATE
DATE ENVELOPES
(Yield: 2 dozen)
¼ cup all-purpose flour
1 3-ounce package cream cheese, softened
½ cup butter or margarine, softened
1 cup semisweet chocolate morsels
1 8-ounce package chopped dates
½ cup finely chopped walnuts
2 teaspoons grated orange rind
2 teaspoons orange juice
Confectioners’ sugar
In a medium bowl, combine flour, cream cheese, and butter; knead
until well blended. Shape into a ball; wrap in plastic wrap.
Refrigerate for 1 hour.
In a medium bowl, combine chocolate morsels, dates, walnuts, orange
rind, and juice. Press into a ball.
Preheat oven to 350°F.
On a lightly floured board, roll dough into a 13-inch square; cut
into 2½ inch squares. Shape rounded teaspoonfuls of the filling
into a log. Place in the center of pastry squares. Bring two
diagonal corners of each square to the center and pinch. Place on
UNGREASED cookie sheets.
Bake for 20 minutes or until golden brown. Remove from cookie
sheets; cool on a wire rack. Dust with confectioners’ sugar.
