CHERRY DATE SKILLET COOKIES
(Yield: 5 dozen)

1 cup butter or margarine, softened
1 cup firmly packed brown sugar
8 ounces chopped dates
1 egg, lightly beaten
3 cups Rice Krispies cereal
1 cup flaked coconut
½ cup chopped maraschino cherries
1 tablespoon vanilla extract
2½ cups flaked coconut

In a 10-inch skillet, melt butter.  Stir in sugar and dates until sugar is dissolved; remove from heat.  Stir in the egg.  Return to heat; continue cooking, stirring constantly, for 5 minutes or until mixture comes to a full rolling boil.  Boil for 1 minutes.  Remove from heat.  Stir in cereal, 1 cup flaked coconut, cherries, and vanilla until moistened.  Let stand for 10 minutes.  Shape rounded teaspoonfuls of dough into 1-inch balls.  Roll in remaining coconut.
