ANZACS
(Yield: 3 dozen)

1 cup butter or margarine, softened
2 tablespoons maple syrup
2 cups self-rising flour
2-2/3 cups rolled oats
2 cups flaked coconut
1 cup sugar

Preheat oven to 350°F.  Spray baking sheets with non-stick vegetable spray.

In a large mixing bowl, cream butter with syrup until light and fluffy.  Add flour, oats, coconut, and sugar, mixing until well blended.  Shape the dough into small balls; place, 1-inch apart, on prepared baking sheets.

Bake 12 to 15 minutes or until delicately browned.  Cool on a wire rack.
