pie Cuban Black Beans

Description:
My Favorite Dish. Freezes well, so double the recipe.

This is the original recipe. I make mine without the hamhock and ham. I have used chicken instead of ham ( no hamhock).

Ingredients:
1 lb dry black beans
4 cups chicken broth
1 green pepper (chopped)
1 onion (chopped)
few ounces of ham (cubed)
hamhock [optional]
3 cloves of garlic
3 tsp cumin
2 tsp paprika
Dash of chili powder
2 bay leaves
2 TBLSP wine vinegar

Directions:
Soak the beans according to the package.
Add all ingredients and bring to a boil, then simmer until done, about 1 1/2 to 2 hours.

pie Margaret's Mexican Hot Dish

Description:
"Excellent" says MaMaJo

Ingredients:
1-9.5 oz. package of white corn tortillas (cut into quarters)
1-103/4 oz. Campbell's Cream of Chicken soup
3/4 soup can of milk
1-4oz. can of Old El Paso Chopped green chiles
1/2 tsp. garlic powder
1/2 tsp. black pepper
2c. cooked diced chicken
1-8oz. package Sargento shredded Mexican cheese
cooking spray

Directions:
Mix soup, milk, chiles, garlic powder, and black pepper.
Spray a 9"x9" square Pyrex with cooking spray.
Line the bottom of Pyrex with a layer of tortillas.
Layer on cup of the chiken, 1/3 of the soup mixture, and 1/3 of the cheese.
Add another layer of tortillas, chicken, soup micture, and cheese.
Add a final layer of tortillas, the rest of the soup mixture, and the cheese.
Cover with foil and bake a 350 degrees for about an hour.
Uncover and contue baking until brown and bubbly.
Cut into squares and serve.

Note: Two or three tablespoons of chopped jalapenos can be added if you like spicy food. This dish can also be made ahead and kept in the refridgeratior until you are ready to bake it. Lower fat products can be used, too.
