pie Banana Bread

Description:
A lighter version of an old-time favorite.

Ingredients:
1 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/8 teaspoon salt
2 slilghtly beaten egg whites
1 cup mashed banana
3/4 cup sugar
1/4 cup cooking oil

Directions:
In a medium mixing bowl stir together flour, baking powder, baking soda, cinnamon, and salt.

In a large mixing bowl stir together egg whites, banana, sugar, and oil. Stir flour mixture into banana mixture just till moistened.

Spray an 8x4x2-inch baking pan with nonstick spray coating. Spread batter in prepared pan. Bake in a 350 degrees oven for 45 to 50 minutes or till a toothpick inserted bear th center comes out clean.

Cool bread in the pan for 10 minutes. Remove pan and cool thoroughly on a wire rack. For easier slicing, wrap the bread in plastic wrap and store overnight.

Makes one loaf (16 servings)

Preparation Time: 10 minutes
Cooking time: 45 minutes

pie Hawaiian Bread

Description:
Good moist bread can be used as a dessert or appetizer.

Ingredients:
3 1/2 cups crushed pineapple & juice
3 cups coconut
4 eggs lightly beaten
1 1/2 cup sugar
4 cups all purpose flour
2 tsp. Salt
2 tsp. Baking soda
1 jar marchino cherries (red and green or red or green depending on how you would like it.)

Directions:
Mix pineapple & juice,coconut, cherries, eggs, sugar together add flour, salt, baking soda and mix well. Pour into greased loaf pan.

Oven temp: 325 degrees
Baking time: 1 hour

NOTE: Use spoon to mix with. Do not use electric mixer.

Preparation time: about 20 minutes
