Shrimp casserole
- 1 cup cooked brown rice
- 1 pound shrimp , peeled and deveined
- 1/2 cup minced onion
- 1 bay leaf
- 3 cups peeled and chopped tomatoes
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Toss all the ingredients together and bake in a covered casserole at
350 degrees for 30 minutes.
