Hot and Sour Shrimp

Cooking Sauce:

Combine all ingredients in a small bowl.

Toss the shrimp in a bowl with the sherry.

Prepare the cooking sauce and set aside.

Heat wok or frying pan over medium-high heat.

When the pan is hot, add 1-1/2 tablespoons of the oil.

When it begins to heat, add the garlic, ginger and red pepper.

Stir once, add the shrimp , and stir fry until they turn coral (about 3 minutes).

Remove them from the pan.

Heat the remaining oil.

Add the celery and bamboo shoots and stir fry for 1 minute.

Stir in the cooking sauce, then add the shrimp back in.

Add the green onion next.

Cook, stirring, until the sauce bubbles and thickens.
