Shrimp Roasted with Citrus and Tarragon

Preheat the oven to 450 degrees.

When hot, warm 2 tablespoons of the olive oil in a baking pan on top of the stove, then add the tarragon.

Return to the oven until the tarragon begins to sizzle.

Add the shrimp , then sprinkle with the orange juice and zest, the salt and pepper and the remaining olive oil.

Roast until the shrimp turn coral, about 8-10 minutes.
