Spicy Grilled Shrimp

Prepare grill.

Cover tomatoes with boiling water in a bowl.

Let stand 10 minutes.

Drain tomatoes, reserving 2 Tbs. plus 2 tsp. soaking liquid.

Place tomatoes, reserved soaking liquid, lemon juice, oil, red pepper and salt to taste in a blender or food processor.

Process until well blended and pour over shrimp .

Thread shrimp onto long skewers.

Place skewers on grill over medium heat.

Grill 8 minutes, turning skewers occasionally and brushing with any remaining tomato mixture, until shrimp turn opaque throughout.
