ROW ~ "Facing Tomorrow" with Fewer Dishes ~ Sole Fillet in Wine Sauce

Patsy Cline really enjoyed entertaining her family and friends. I enjoy entertaining too, but I'll never get used to the endless dishes that seem to go hand in hand with it. You, too? Wouldn't it be nice to serve a special dish requiring only a limited number of pots and pans so you won't have to lament, " How Can I Face Tomorrow" when I know there are so many dishes to do? Well, your wish is my command as I present you with this almost one dish meal. It's simple enough for you, but elegant enough to serve to your special guests. And since this one includes shrimp, I'm sure Patsy would have loved it!

"Facing Tomorrow" with Fewer Dishes ~ Sole Fillets in White Wine


You'll need:

  • 4 large sole fillets
  • 1/2 lb. shrimp, cut each in half
  • 1/4 - 1/2 lb. of fresh mushrooms
  • 2 tbs. scallion
  • 2 tbs. chopped red pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup butter
  • 3 tbs. flour
  • 1 cup light cream
  • 1/4 cup dry white wine
  • 1/2 tsp. salt (or to taste)
  • A dash of pepper (or to taste)

    Arrange filets in a shallow 9 x 13 " greased baking dish and sprinkle the raw shrimp over them. Saute mushrooms, scallion, and red pepper in the butter, about 3-4 minutes being careful not to brown them. Stir in the flour and add the cream Cook and stir until blended. Add the wine, salt and pepper and cook until smooth. Spoon the sauce over the fish. Top with cheese. Bake at 350 for 20-25 minutes.

    Serve with a tossed salad and baked potato!
