Recipe of the Week ~ " I Love Your Money " ~ Silver Dollar Pancakes with Honey Syrup


... And so the story goes that this song was written by a 14 year old boy. To thank that boy for writing such a "cute " song, here's a recipe boys and girls will adore - Silver Dollar Pancakes. These pancakes are plain, simple, and fun. Their size makes them so " cute " even fussy kids will "smile" as they gobble them up. Why not top these dollars with warmed honey instead of the traditional maple syrup! "Confidentially" speaking, this breakfast will have your kids lovin' the money and the honey!

You'll need:

  • 2 cups Flour
  • 2 tbs Sugar
  • 3/4 tsp Salt
  • 3 ts Baking powder
  • 2 Eggs
  • 1 1/4 cups Milk
  • 1/4 cup canola or sunflower oil
  • 1 tsp. vanilla

    Sift to-gether flour, sugar, salt and baking powder. Beat the eggs and add the milk and the vanilla.Combine with dry ingredients, mixing until smooth. Add oil and mix. Drop by spoonfuls on hot griddle using just enough batter to make the pancakes the size of a silver dollar. Allow " dollars" to cook over medium heat, gently flipping over when edges look cooked and bubbles begin to break on surface. Continue to cook until golden brown. .

    Warm the honey in microwave or on stove top in small pan. Use the honey as a syrup instead of a traditional maple syrup.
