QUICK STOVE TOP SHRIMP SCAMPI


One and a half lbs. of fresh shrimp w/ tails - shell and devein
3 Tbs. olive oil
1 Tbs. butter or margarine
1 Tbs. fresh lemon juice
2 Tbs. of Italian Seasoning
About 6 cloves of garlic

Cook the shrimp by dropping in boiling water until pink ( DO NOT OVER COOK)- Drain

In frying pan, melt butter in to the oil at medium - medium-high heat.
Add the shrimp and stir until heated thoroughly - about 2 minutes
Stir in the garlic -- cook another 30 seconds and remove from heat

In a small bowl mix the lemon juice, 1/2 tsp. salt, 1/4 tsp. pepper and the Italian seasoning together. Add mixture all at once to the shrimp. Toss until coated coated and serve over a bed of white rice.
