NEW ZEALAND HOLLY COOKIES

These cookies are my calling card! I found this cookie recipe in a magazine in 1985 and have made them ever since. The recipe is from a woman named Kate Beckman of Chino, CA. I know you will enjoy these special cookies. Thanks Kate!

See the Holly Cookies in the tray of cookies ? I present the holly as a flower with a simple stem and two leaves. You can make them as ornate as you'd like!


NEW ZEALAND HOLLY COOKIES


Ingredients:
  • 2 cups flour
  • 1 cup sugar
  • 1 tsp. cinnamon
  • 3/4 tsp. baking powder
  • 1/2 cup butter
  • a slightly beaten egg
  • 1/4 cup milk
  • 2/3 cups raspberry jam
  • 2 cups sifted confectioner's sugar
  • 2-3 tbs. milk
  • red hots candies
  • green food coloring

    Mix flour, sugar, cinnamon, baking powderand 1/4 tsp. salt. Cut in butter to pea size. Make a well in center. Combine egg and 1/4 cup milk. Add all at one time to dry mix. Stir until moist. Roll dough 1/8 " thick on lightly floured surface. Cut into 2" circles or flowers with cookie cutter. Bake at 375 degrees for 8-10 minutes on ungreased cookie sheet. Cool.

    Place 1/2 tsp. raspberry jam on bottom of 1 round, top with another, etc.

    Icing: In small bowl, mix the confectioner's sugar, vanilla and enough milk to make a glaze. Spread atop each completed cookie. While the icing is still wet, drop red hot candies on to cookie. Let icing dry completely. When dry, paint several holly leaves and a stem on each with green food coloring using a very small bristle paint brush.
    Makes 54 cookies -- 76 calories per cookie
