Poor Man's Souffle

50 or so Saltine Crackers
4 cups grated cheese
4-5 eggs
Approx. 4 cups milk

Spray Pam into a 9x13 dish.
Layer crackers and cheese, ending with a layer of cheese.
Crack eggs into a 4-cup measuring cup, beat eggs, fill to top with milk.
I use skim but any milk will do.
Carefully pour over crackers and cheese.
Let sit for about 1/2 hour.
Bake at 350 degrees F for 40 minutes.
Serve with a salad.

ZIPLOC OMELET

This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelet!

Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.
Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them. Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc. Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.

Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.

Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.

 

Your Plain Basic Ordinary Pancake

Beat 3 eggs thoroughly, add 3 and 3/4 cups milk. Mix 4 cups flour, 9 tsp baking powder, 1 tsp salt, 9 tbsp sugar in a large bowl. Make a well in the middle of the dry ingredients. Slowly add the milk egg mixture. Add 9 tbsp oil or melted butter and 1 tsp vanilla. Stir quickly until ingredients are just mixed and batter is till lumpy in appearance. Preheat fry pan until hot on medium heat. Cook the pancakes until they are filled with bubbles and turn for the other side. Do not turn pancakes more than once during cooking.

Brighten up your pancakes

Add raw grated potatoe or floured blueberries or a cup of grated raw apple or fold in a cup of mashed ripe bananna at the end. Maybe some wheat germ or 1/3 cup of something like maybe Red River Cereal or what ever. There is no end to what you can do with pancakes...

French Pancakes.

Beat 3 egg yolks until thick and lemon coloured add 1 tblspoon sugar and 1/2 cup of milk and 1 tblspoon melted butter. In a separate glass bowl beat the egg whites until stiff but not dry. Fold whites into batter. Cook and then spread each pancake with jelly (apple raspberry currant etc) and roll while hot. Sprinkle with icing sugar and serve.

Danny's Puff Pancake
..Melt quarter cup butter in oven proof skillet.
In a bowl beat two eggs till fluffy.
Blend in half cup milk, half cup flour mix
until smooth.Add cinnamon or nutmeg to taste if desired. Pour
mixture over melted butter.Bake uncovered at 400 degrees for 15 to 20
minutes until puffed and golden brown.Serve hot with syrup.
