Vera (The Netherlands) Cooks:

Turkish Meal from Holland

You need
: a pound of meatloaf
a pound onions
some garlic
rice
1 egg
sambal
mayonaise or yoghurt
Turkish bread

Make tiny balls from the meatloaf, but before you do put in garlic, egg and some sambal.
In the meanwhile cook the rice with some salt and fry sliced potatoes. The onions have to be baked for a short while otherwise they get too dark. When they are golden brown they are done.

When you have done that make the garlicsause to go with the meal: take three spoonfuls of mayo or youghurt and a little water to make it more smooth. Then take garlic (I always use fresh garlic for this one... 1 clove is enough).

Get a plate and put onions on it first, then rice with the garlic sause. Then the meatballs and the sliced potatoes.
We always eat Turkish bread with it.

Wild Rice Soup


You will need:
1 cup uncooked wild rice
3 cups boiling water
2 strips smoked bacon
1/4 cup chopped onion
3/4 cup sliced celery
1/2 cup carrots
1 can (14 1/2 ounces) chicken broth
2 cans (10 3/4 each) cream of mushroom soup
2 soup cans of milk
1 can (4 ounces) mushrooms, plus the liquid
1 teaspoon seasoned salt and ppeper to taste

Combine rice and boiling water in large saucepan, simmer covered 50-60 minutes. Drain off excess liquid, set rice aside. Fry bacon till crispy, set removed bacon aside. Saute onion, celery and carrots in small amount of bacon fat. Combine broth, soup, milk. mushrooms, salt and pepper, and the crumbled bacon, sauteed vegetables and wild rice, simmer covered for 1 hour.

Fruit Ambrosia


You will need:
1/2 pint whipped cream
1 medium tin of pineapple pieces (drained)
1 large bunch of seedless grapes
1 medium tub of unsweetened natural yoghurt
1 packet of marshmallows
1 packet of pineapple lumps (candy)

Mix all together - yummy!!! Served as dessert on its own.


Sue's Mum's Chocolate Fudge


You will need
: 1 packet sweet biscuits
4 oz melted butter
1 tablespoon cocoa
sultanas
4 oz sugar
1 egg

Mix all ingredients together. Press into shallow tray. Regrigerate, ice and sprinkle with coconut and cut into square.

Golda (Moscow, Russia) Cooks:

Black Devil's Food Cake

You will need:
1 cup cocoa
2 cups strong, hot coffee
3 cups flour
2 tsps. baking soda
1/2 tsp. baking powder
Pinch of salt
4 eggs
1 cup margarine
2 1/4 cups sugar
2 tsps. vanilla extract
1/2 tsp. almond extract

Preheat oven to 325 degrees F, and grease a 9x13 inch cake pan.

Mix cocoa and coffee together in a small bowl until there are no lumps. In a separate bowl combine dry ingredients. Beat together eggs, margarine, sugar, and vanilla and almond extracts in a large mixer bowl.

Add flour mixture alternately with the cocoa-coffee mixture, beginning and ending with dry ingredients. Fold in cherries.

Pour batter into prepared pan and bake for 45 minutes to an hour, or until toothpick inserted in a center comes out clean.


For frosting you will need:
4 teaspoon water
1/2 cup sugar
1/4 cup cocoa
50 gr margarine
vanilla extract

Cook together for 5 minutes. Put on the cake.
