Spaghetti and Spinach Pie


Ingredients

* 4 cups cooked thin spaghetti (hot)
* 1 cup ricotta cheese
* 2/3 cup grated Pecorino Romano cheese
* 2 eggs (beaten)
* 4-6 large garlic cloves (sliced thin)
* 1-10 oz. package fresh spinach
* 3 Tablespoons extra virgin olive oil
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/4 teaspoon garlic powder
* Pasta Sauce

Instructions

* Preheat oven 350 F
* Grease a 9 inch deep dish glass pie plate.
* Mix the spaghetti, grated cheese, and eggs in a bowl.
* Spread half the spaghetti mixture over the bottom and up the sides of the plate to form a crust.
* Spread the ricotta cheese evenly over the bottom only, of the spaghetti pie crust. Set aside.
* Sautee the garlic in the olive oil until lightly brown.
* Add spinach, salt, pepper, and garlic powder.
* Cook over medium heat approximately 8 minutes, until spinach is wilted.
* Spread the cooked spinach over the ricotta cheese.
* Spread the remaining spaghetti mixture over the top covering the spinach.
* Bake at 350 F for 25 minutes, then raise heat to 425 and bake for an additional 10 minutes,
...or until lightly browned on top.
* Let stand 10 minutes before cutting.
* Slice in pie wedges. Serve and top with your favorite pasta sauce.
* Enjoy!
