Recipe of the Month

............Potato Leek Soup



Ingredients

* 3 Tablespoons butter (preferred), or may use olive oil
* 4 leeks - (white part only) chopped
* 1 medium onion - chopped
* 4 large potatoes - diced
* 2 stalks celery - chopped
* 6 large sprigs of parsely
* 5 cups of vegetable stock - may use a quality canned or frozen, if fresh not available
* 2 teaspoons salt
* 1/4 teaspoon pepper
* 1 teaspoon dried leaf chervil
* 1/4 teaspoon dried leaf marjoram
* 3 cups milk - scalded

Instructions

* Melt butter in large saucepan, add leeks and onion
* Cook gently 5 minutes, stirring - do NOT brown
* Add potatoes, celery, parsley, vegetable stock, salt, pepper, chervil, and marjoram
* Cover and cook over moderate heat about 30 minutes, or until vegetables are tender
* Whirl in blender (or press through sieve) - do NOT over blend
* Return to saucepan. Bring to a boil and stir in hot milk
* Taste and add more salt and pepper, if necessary
* Serves 8
* Enjoy
