Killer Brownies

ingredients:
BROWNIES:
1 1/4cups flour
3/4cup    cocoa
1tsp      baking powder
1/2tsp    salt
3         eggs
2cups     sugar
3/4cup    margarine (melted)
1tsp      vanilla

TOPPING:
3/4cup    chopped peanuts (optional)
1cup      chocolate chips  or crushed red and green 
              M&M's for  Xmas
2cups     miniture marshmallows
1/2cup    chocolate sundae topping or
          chocolate sauce (milk mate or brown cow)


BROWNIES:COMBINE flour, cocoa, baking powder and salt; 
set aside.
BEAT eggs, sugar, melted margarine and vanilla in large 
mixing bowl until smooth.
ADD dry ingredients. Mix well. Spread evenly in a 
greased 13"x9" cake pan.
BAKE at 350°F for 20-25 minutes, or until set.

TOPPING:SPRINKLE peanuts, chips and marshmallows on 
top of hot brownies.
	
DRIZZLE with chocolate topping. Return to hot oven and 
bake 7-10 minutes longer,or until lightly browned.Cool 
completely before cutting. 
Store in refridgerator.

Chicken Breast Diane

Ingredients:
4 large boneless chicken breast halves
½ tsp. salt
½ tsp.black pepper
2 Tbsp. olive or salad oil
2 Tbsp. butter or margarine
3 Tbsp. chives or green onions
2 Tbsp. lemon juice
3 Tbsp. chopped parsley
2 tsp. dijon style mustard
¼ cup chicken broth

Directions:
Place chicken breasts between sheets of wax paper and 
pound slightly with a mallet. Sprinkle with salt and 
pepper. Heat 1 Tbsp each of the oil and butter in a 
large skillet.
Cook chicken over high heat for 4 minutes on each side. 
DO NOT cook longer or they will be overcooked and dry. 
Transfer to a warm serving platter. Add chives, lemon, 
parsley and mustard to pan. Cook 15 seconds, whisking 
constantly. Whisk in the broth. Stir until sauce is 
smooth. Whisk in remaining butter and oil. Pour over 
the chicken. Serve immediately.
Yields four servings

Shepherds Pie

Ingredients:
1lb  ground beef...I use lean but this is optional
1 can creamed corn
1 can Campbells mushroom soup
1/2 to 3/4 cup water
potaoes

Directions:
peel and boil potaoes

fry the hamburger until fully cooked adding salt and 
pepper to taste if desired, do not over cook .
Stir in mushroom soup, add water to desired 
consistency, it should be moist but not runny.
Remove from pan and put into a casserole dish. 
Spread it evenly.  Add the corn and layer it evenly. 
In the pot you boiled them in, mash the potatoes, 
adding milk and butter to make them creamy, they 
need to be smooth enough to spread. Layer them on 
top of corn. A spatula and wooden spoon are the 
best tools for this job. Best technique is to plop 
small piles of potatoes around the casserole dish 
and then even it out otherwise you end up 
mushing it all together!

Bake in oven at 350°F until potoes brown and hamburger 
starts bubbling.

Serve with ketchup, louisiana hot sauce, salsa or plain. 

Lemonade Pie

Ingredients:
1-9" graham cracker pie crust
1 can condensed sweetened milk
1-6oz. can of frozen lemonade (not drefrosted!)
juice of one lemon
1-9oz. carton Cool Whip (defrosted)

Directions:
Fold frozen lemonade and condensed milk together.
Add lemon juice. Gently fold in the Cool Whip and
put mixture in the pie crust. Refridgerate for several
hours before serving.

Parmesan Chicken Wings - a new twist to an old favorite

Ingredients:
1 cup parmesan cheese
1 tsp parsley
1 tsp paprika
1 tsp salt
1/4 tsp pepper
1/4 tsp garlic (or perhaps a bit more if you prefer)
2 lbs chicken wings (completely defrosted)
1/2 cup butter or margerine

Directions:
Mix all the dry ingredients in a large bowl.
Melt the butter in a small bowl.
Dip raw wings in butter, then roll in the parmesan cheese
mixture.
Place wings on a cookie sheet.

Bake in oven for 45 minutes at 350°F

Mock Chinese Meal

Ingredients:
I Package of frozen premade mini meatballs (cook as many as required
1 can baby corn
1 can water chestnuts
1 can sliced pineapple
2 cups uncooked Minute Rice
homemade sweet and sour sauce

Ingredients for sweet and sour sauce:
2 cups brown sugar
2 tbsp. flour
1/2 cup vinegar
1/4 cup hot water
2 2tbsp. soya sauce
1 tbsp. ketchup

Directions:
Make up the Sweet and sour sauce while you brown the meatballs in a large casserole dish.
Making the sauce is easy just mix all the ingredients for the sauce in a bowl. This job I usually delegate to my 4 year old daughter. I help her measure but don't worry exact measurements here are not vital *G*
Once the meatballs are warmed a bit pour sauce on them and return to the oven for another 15 minutes
In the last 10 minutes add the corn, water chestnuts, and pineapple
Start the rice
Serve with Broccoli and fortune cookies.

My kids love this meal. It is easy on their delicate tastebuds. Everything is just their size and they even get to help cook. BTW it warms up nicely too.
