Boiled Crawfish Cajun Style
Boiled Crawfish

Ingredients

One sack of Crawfish 40-50 lbs.
Big Pot with enough water to cover the crawfish (about 5 gallons of water)
8 to 10 Big Onions (quarted)
8 to 10 Lemons (cut in half)
Corn on the Cob (cut in half)
8 to 10 Heads Garlic
Potatoes
(put potatoes in a small sack)
Celery
Smoked Sausage
12 fl. oz of liquid Crab Boil
2 boxes of salt

Instructions

Cover the Pot and bring the water to a boil
with all ingredients except the Crawfish,
Salt and ½ of the liquid Crab Boil.
Boil the ingredients for a while until soft
(about 15 minutes).
Dump the Crawfish in boiling water.
Bring the water to a boil again quickly
and boil Crawfish for about 4 to 5 minutes.
Add one box of Salt and Crab boil.
Shut off fire on burner.
Leave them soak until salt and crab boil is absorbed (add more if need to taste).
Drain the Crawfish, into a wire basket
or Scoop out with a net...
