What is a cajun dish? If it can be cooked in one pot, and you got yourself the right spices, you got a cajun meal. You also gotta have a BIG pot of rice to serve with it.

What are the right spices? First of all, you don't have to make your Cajun dish so hot it keeps you running to the bathroom and eating Tums all night. However, I do make most of my meals rather hot. My family is use to it, your family may not be. It's the combination of spices that make a Cajun dish. In Louisiana, there is a company that puts out a great "season all": Tony Chachere's Creole Seasoning. I use it all the time. It has all the Cajun spices combined in one nice package.

The major spices in Cajun cooking are:
Cayenne Pepper or Red Pepper (This spice should be used sparingly, or you will regret it.)
Garlic (and it's good for you too!)
Salt (not good for you!)
Gumbo File (crushed Sssafras leaves.)
Bay Leaves (adds a real nice touch.)
Oregano (okay so it's not Cajun, but I like it.)
Basil (not Cajun either, but it tastes real good in my one pot wonders!)
